Korean Mixed Vegetables and Rice (Bibimbap) Recipe

Ate Cecille of Life is Good and Beautiful requested if I can share the recipe to one of our most favorite Korean dish, Bibimbap. I got this recipe at koreanfood.about.com. The author of this recipe (N. Imatome-Yun) said
"Bibimbap is delicious, gorgeous on the plate, and easily tweaked for different palates and spice levels. I've included 6 vegetables in this recipe, but you can easily make it with just 3 or 4 or what you happen to have in your fridge. Koreans usually eat this rice dish with some beef, but I usually top mine with just an egg fried sunny side-up."
Ingredients: * 2 cups medium-grain Korean (or Japanese) rice

* 1 large cucumber, sliced into thin strips

* 1.5 cups bean sprouts, parboiled and squeezed of excess water

* 1.5 cups spinach, parboiled and squeezed of excess water (3/4 lb before cooking)

* 2 carrots, julienned

* 4 shiitake mushrooms, rehydrated if dried and then sliced

* 1 zucchini, sliced into thin strips

* 1/2 lb meat (optional, both and cooked ground meat work well)

* Fried egg as a topping (optional)

* 2 Tbsp sesame oil

* Sesame seeds

Preparation: 1. Cook rice in rice cooker or on the stove.

2. Give cucumber strips a saltwater bath for 20 minutes and then drain.

3. Season spinach with 2 tsp sesame oil, 1 tsp salt, and a dash of sesame seeds.

4. Season bean sprouts with 2 tsp sesame oil, 1 tsp salt, and a dash of sesame seeds.

5. Sauté carrots with a dash of salt.

6. Sauté mushrooms with a dash of salt.

7. Sauté zucchini with a dash of salt.

8. Place cooked rice in large bowl and arrange vegetables on top.

9. If desired, beef or egg can be placed in the center.

10. Serve each with small bowls of red pepper paste (kochujang) and sesame oil.

11. To eat, add a small amount of oil and desired amount of red pepper paste to your bowl and mix everything together with a spoon.

Added sweetness

It's the first day of the hearts' month and love is in the air. So I added a little bit of sweetness to our dining table, I stumbled upon a recipe of sweet and sour pork while I was bloghopping yesterday and I prepared it today. Below is the recipe. Sweet and sour pork with pork loin and pineapple, along with seasonings. Cook Time: 1 hour, 20 minutes Ingredients: · 1 1/2 pounds boneless pork loin, sliced 1/2-inch thick · 1 tablespoons vegetable oil · 1 can (20 ounces) pineapple chunks in juice · 3/4 cup water · 1/4 cup vinegar · 1 tablespoon soy sauce · 1/4 cup brown sugar · 1/2 teaspoon salt · 2 tablespoons cornstarch · 2 tablespoons water · 1/2 cup thinly sliced onion · 1 green pepper, cut in thin strips · 2 cups hot cooked rice Preparation: Cut pork slices into strips about 3 inches long and 1/2 to 1 inch wide. Sauté pork strips in hot oil over medium heat until lightly browned; drain. Drain pineapple; reserve juice. Combine pineapple juice, 3/4 cup water, vinegar, soy sauce, brown sugar, and salt; pour over pork in skillet. Cover and simmer 1 hour, or until meat is tender. In a cup, combine cornstarch and 2 tablespoons water; stir until smooth. Add cornstarch mixture to pork mixture. Cook over low heat, stirring constantly, until mixture is thickened and bubbly. Add pineapple chunks, onion and green pepper. Cover and simmer sweet and sour pork for 10 minutes longer, or until vegetables are tender. Serve sweet and sour pork over rice. Sweet and sour pork recipe serves 4 to 6.

food for your bloggy tummy!

My daughter and I made a caldereta yesterday because its been a while since we last had it. I am not very fond of it but hubby love it so much that I amke it once in a while. My daughter love it too. I am trying to introduce my son to foods that we really like but he seem to not care so much about eating good food yet. Today, we made something with soup since it's chilly outside. We made nilagang baboy or pork soup with veggies. Rylie love veggies so she doesn't have any problem eating with us but not our son EJ. He is very picky with food. But anyhow, here is the nilaga... Amazing Domestic Seafood Recipe

I grew up in a place where the ocean provided the main resources for our existence. I would, often times, join my father on his fishing trips. One time we went fishing and I caught a very big fish and my father laughed at me because I panicked and immediately called for his help. I love most types of seafood. My favorites are shrimp and crab. My daughter, though only three years of age, requested shrimp for lunch today. Shrimp is very quick and easy to prepare. This is my own recipe for it. You will need the following: 100 grams of shrimp 1/2 cup of water 1 tbsp butter 1 medium tomato (sliced) 1 medium size of onion (chopped) 2 cloves of garlic (crushed) small piece of ginger (crushed) 1 cup of sprite 1 tbsp of fish sauce (optional) hot peppers(optional) salt and black pepper to taste Place the shrimp in the pan then add all the ingredients on top of it. Bring it to a boil for 8 minutes, give it a quick stir and boil it for another 7 minutes and its done. You can add some hot peppers if you want it a little bit spicy. (Although I love spicy food, I usually don't add the hot peppers because of my children). The secret to this dish; do not over cook the shrimp so they will remain tender. I think that my recipe would be a great contender in the upcoming Great American Seafood Cook off event. You could find the details of this great event at http://www.greatamericanseafoodcookoff.com/. I am excited to participate in this cook off showdown because domestic seafood is very obtainable in our area. We live just minutes from the Korean public market known as the "Five Day Market" where seafood is plentiful and inexpensive. Most of the seafood can be purchased straight from aquariums which ensures freshness. Here are the pictures of the shrimp I cooked for lunch.
