Kamatis (Tomato)



Food fight! Today thousands of revelers in Buñol, Spain, will pick up their weapon of choice—tomatoes—to take part in the annual throwing festival, la Tomatina. You can celebrate this fruit in a more civilized way with cooking club's trio of recipes. They'll give you all the satisfaction, without all the mess: Pesto-Stuffed Cherry Tomatoes With the tip of a paring knife, hollow out small V-shaped cavities in the tops of plump cherry tomatoes. 

Fill with a dab of purchased pesto. Tomato and Cheese Melts Top 4 slices of rustic bread with slices of tomato and smoked Gouda cheese. Place on a baking sheet; broil 2 minutes or until cheese melts and browns. Sliced Summer Tomatoes Thinly slice 1 lb. tomatoes; arrange overlapping on platter. Sprinkle with scant 1/4 teaspoon sugar, 1/4 teaspoon salt and pepper to taste; drizzle with 5 teaspoons olive oil and 1 tablespoon red wine vinegar. Garnish with 3 sliced green onions. Let stand 5 to 15 minutes before serving.

  1. hmmm delicious-o! Rich in lycopene, that helps to reduce certain cancers...aside from the overwhelming vitamins on it, vitamins A to Z.
